Soluble in water (1 g/0.5 mL at 25 °C; 1 g/0.2 mL boiling water), ethanol (1 g/170 mL) or methanol (1 g/100 mL); moderately soluble in glycerol or pyridine.

Sucrose can be used to prepare density gradients for cell/organelle separation. The refractive index of the solution will be directly related to the density. In addition, sucrose can be used as a supplement in plant, insect, and bacterial culture media. It can also be used in various enzymatic assays.
